Chocolate Power-House Pudding (by Natural Grocers)

While checking out at Natural Grocers the other day, my daughter picked up a recipe card that was near the register. The recipe caught her eye because it was for chocolate pudding. This was a great find on her part because the recipe only requires 6 whole-food ingredients and has a good mix of healthy fats and fiber. The recipe is gluten, nut and dairy free so enjoy!

Before I get to the recipe I want to give a recommendation for Thrive Market. I've been ordering products through them for several years now and couldn't be happier with the quality. In this recipe in particular, I used Thrive Market's house brand of raw organic honey and organic coconut oil.

Now for the recipe and thanks to Natural Grocers for providing a healthy dessert idea. All you need is a food processor or immersion blender and the following ingredients:

1 medium ripe organic banana

1 medium ripe organic avocado

1 tbsp organic honey

1/4 cup organic cocoa powder

1/4 cup organic coconut oil

1 tsp organic vanilla

Combine all the ingredients in a food processor and blend until smooth. You may need to scrape down the sides a couple of times to make sure all the ingredients are incorporated. Once the mixture is smooth it can be refrigerated and kept for 3 - 4 days. Depending on how much you eat, the above recipe will make 4 - 6 servings.

This is a calorie-dense treat and the approximate calorie and macro breakdown are listed below, based on 4 servings. Keep in mind that these are close estimates only, due to variations in sizes of the fruit you use.

One Serving:

280 calories

Fat 22g

Carbs 18g

Fiber 6g

Protein 3.5g

That's it! My kids love it and really enjoy helping prepare it. I hope you enjoy it as much as they do!
